It was based on a recipe from our neighbor Marion S. It makes a wonderful moist cake that should keep for several days.<\/p>\n<h2>Ingredients<\/h2>\n<ul>\n<li>500g Sultanas<\/li>\n<li>Extra raisins(approx 200g)<\/li>\n<li>250g butter<\/li>\n<li>3 eggs (NZ Size 7)<\/li>\n<li>1 &amp; 1\/2 cups Sugar<\/li>\n<li>1 teaspoon baking powder<\/li>\n<li>2 &amp; 1\/2 cups flour<\/li>\n<li>1 teaspoon lemon juice or essence<\/li>\n<\/ul>\n<h2>Extras<\/h2>\n<ul>\n<li>20cm cake tin<\/li>\n<li>Baking paper<\/li>\n<li>Butter for buttering the baking paper<\/li>\n<\/ul>\n<h2>Method<\/h2>\n<table class=\"zsteps\" border=\"0\">\n<tbody>\n<tr>\n<td><\/td>\n<td><a  href=\"http:\/\/www.zoyinc.com\/wp-content\/uploads\/2012\/12\/342_Sultana_V3.jpg\" class=\"thickbox no_icon\" title=\"342_Sultana_V3\"><img loading=\"lazy\" decoding=\"async\" alt=\"342_Sultana_V3\" src=\"http:\/\/www.zoyinc.com\/wp-content\/uploads\/2012\/12\/342_Sultana_V3-300x256.jpg\" width=\"250\" height=\"213\" \/><\/a><\/td>\n<td>Put sultanas and raisins into a large saucepan and wash well. Bring to the boil. Simmer for 8 minutes. Then drain the water off. At this point I gently press down on the sultanas and raisins with a potato masher to try to reduce the water in the raisins &#8211; don&#8217;t press too hard.
